How to price half and full
A half plate is usually not half the price of a full. Cooking, gas and a plate cost nearly the same either way, so a half is commonly 55 to 65 per cent of the full. That gap is also what nudges a table of eight to order full plates and share.
Decide it once as a rule, then apply it to every dish: half is about 60 per cent of full, rounded to a number you will be comfortable saying. A rule is also what lets you reprice the whole menu when the price of paneer or oil moves.

How to arrange it so it sells
- Put the five best sellers first, not in alphabetical order. A new customer from another state has no idea where to start and will follow you.

- Group by how people order: dal, paneer, sabzi, tandoor, rice, thali. Not by the order your kitchen cooks them in.
- Put each dish in Hindi, Gujarati and English. A family from another state reads the menu in whichever language is theirs.
- Photographs on the dishes people cannot picture, especially anything Gujarati or regional to a visitor.
- Take things off when they run out. On a highway at eleven at night, a dish that finished at nine should already be greyed out.
